Craig graduated with a Bachelor of Dental Surgery (BDS) with Second Class Honours from the University of Sydney in 1986. He is a general dental practitioner and has been running his own two-dentist practice in Manly, Sydney, since 1988.

He has held an appointment as Adjunct Lecturer in the School of Dentistry and Health Sciences at Charles Sturt University and was admitted as a Fellow of both the Academy of Dentistry International and the Pierre Fauchard Academy in 2015 and the International College of Dentists in 2021.

Craig has had numerous articles on dento-legal matters published in The NSW Dentist and the Guild Insurance Annual Dento-Legal Review and currently provides individually developed one- on-one educational programs to practitioners to enable them to meet specific regulatory requirements.
